DOLCE PANFORTE (say it in an italian accent)

When I was in 2nd year at Silwood I had the amazing experience of working at Ellerman House in bantry bay, this was a recipe used by them often as petit fours at the end of the night with coffee.


Dark chocolate pan forte

Yield: 10
Origin: Ellerman house
Portion size: 10-15g

Ingredients:

½ tablespoon cinnamon
½ teaspoon mixed spice
125g-cake flour
200g mixed nuts
1-tablespoon cocoa
200g dried fruit
100g dark chocolate
150g sugar
150g honey
Icing sugar for dusting

Equipment:

Scale
Measuring spoons
Lined square container to bake mixture in

Preparations:

1) Preheat oven to 150’C. Sift flour, cocoa and spices together then mix in fruit and nuts that have been chopped. Melt chocolate and set aside.
2) Cook the sugar and honey till it reaches softball stage then take it off and add the dry ingredients with the melted chocolate and mix well. Pour into lined container and bake for 45 minutes. Cool, cut into blocks and dust.

Preparation time and cooking time:

30 minutes and 45 minutes
