Garlicy, cheesy tomato and springonion pasta
Ingredients:
2 portions pasta
45ml olive oil
2 tomatoes, chopped
4 garlic cloves, sliced
1 onion, finely sliced
3 springonions, finely sliced
2 handfulls mature white cheddar
Seasoning
Method:
- Cook the pasta til al dente, drain.
- In a hot saute the garlic for a minute then add the sliced onion and tomatoes and allow to cook down on a hight heat, season well then remove from the heat.
- Add the springonions off the heat and allow to cook in the heat. Toss the pasta through the sauce.
- Place a handfull of cheese on the pasta and toss over so the cheese starts to melt.
- Eat while hot with a glass of chilled white wine.
