Roast vegetable and camembert phyllo pie
Yield: 4
Ingredients:
300g mixed vegetables, roasted
45ml oil
45ml balsamic vinegar
1 camembert
8 sheets of phyllo pastry
1 egg
Method:
· Place the mixed, cut vegetables in a roasting pan and drizzle over the oil, balsamic vinegar and seasoning. Roast until golden. Then drain off any excess liquid.
· Sandwich the 2 layers of phyllo together with beaten egg, lay the vegetables in the centre and then place 3 slices of camembert on top. Fold over the edges of the phyllo and wrap up like a pie shape.
· Brush the pie with beaten egg then bake at 180’C until the phyllo is crispy and golden. Serve with a baby salad.
