BEANS
I have to admit I am not very fond of beans at all, however they are cooked, wether they are in a can, or in a sauce I just really would not choose them on a dish, BUT I tried a bean salad the otherday that Miguel made and i just added a vinegarette to it and it was delicious.
We heated the pot and fried a little Morrocan spice until you could smell it, then added the dried harricot beans that had been soaking overnight, added water and allowed them to cook in a pressure cooker for 45min. When they were cooked they were soft but still whole.
Then we pan fried chicken in the Morrocan spice on a really low heat, once it was cooked and cooled we shredded the chicken and folded it through the beans. I then finally chopped 1 of the Certified organic onions from checkers and finly diced 1 re pepper from the garden and made a simple vinegarette with wholegrain mustard, balsamic vinegar and olive oil. Seasoned everything up and ate it at room temperature.
It was amazing, we had leftovers so I served it with fish today and was even better after it had been marinading in the vinegarette overnight.
